Jalapeño Fundido
Makes 6 servings
1 onion, thinly sliced
2 tablespoons Tabasco Jalapeño Green Pepper Sauce
8 jalapeño peppers
12 ounces grated jalapeño jack cheese
4 ounces Mexican crema
1 teaspoon dried coriander
Preheat oven to 350 degrees.
In a heavy-bottom cast iron pan, dry roast onion over medium heat for 12 minutes; remove and place in an 8 x 8-inch baking dish. Sprinkle green pepper sauce over the onions.
In same pan, dry roast jalapeños over medium heat for 12 minutes. Place in a plastic bag and let steam until cooled. Peel, deseed, and cut into thin strips; reserve.
Evenly layer cheese over top of roasted onions and pour crema over cheese. Place a layer of jalapeño strips over cheese and dust with coriander. Bake for 12 to 15 minutes, or until cheese melts.
